Gluten Free Beef Stew

There’s nothing better than a hot bowl of hearty beef stew. I haven’t indulged in this family favorite since eliminating gluten from my diet. {I used to dredge the meat in flour before browning it.} I have been craving this home-style meal since the weather turned cold. I decided to try something different. Guess what? It turned out deliciously!

GLUTEN FREE Beef Stew with BackToFamily.net

Ingredients:

  • Grapeseed Oil
  • One pound beef stew meat
  • 1 green pepper, chopped
  • 1 red pepper, chopped
  • 1 onion, chopped
  • 2 cloves garlic minced
  • 2 potatoes, peeled and chopped
  • 2 carrots, peeled and sliced
  • 1 pint of peas
  • 2 cups of beef broth
  • 1 teaspoonful paprika
  • Salt and pepper to taste
  • 2 Tablespoonfuls of Arrowroot powder

Directions:

  1. Heat a few tablespoonfuls of Grapeseed Oil in a large skillet. Add beef, peppers, onion, and garlic. Cook till beef is browned.
  2. Stir in potatoes, carrots, peas and broth. Bring to a boil and then reduce to a simmer. Cover. Simmer for 30-40 minutes.
  3. Add paprika, salt and pepper.
  4. Place about two tablespoonfuls of hot broth into a ramekin. Whisk in in the Arrowroot powder.
  5. Stir the Arrowroot mixture into the skillet. Stir until thickened.
  6. Enjoy!

  1. First, and foremost, health is a gift from God we need to steward. Be in prayer for the health of your family and yourself daily.
  2. Attitude Adjustment: Quit your stinkin’ thinkin’! Remember The Little Engine That Could ??
  3. Replace pop {soda, anyone?} with 100% fruit juice diluted with a little water. Or better yet drink…100% water.
  4. Be aware of every bite and gulp of processed sugar. Watch the video and imagine your blood reacting this way.
  5. Get out! Walk with a friend. Raining? March in place while watching your favorite TV show for half an hour daily.
  6. Reduce your gluten intake. Limit breads, pasta, crackers, cakes and cookies.
  7. Everything in moderation. Use small plates and only one helping.
  8. Limit the amount of corn you eat. Doug Kaufmann, host of Know The Cause teaches that corn is contaminated with mycotoxins.
  9. Less fast food. More slow food.
  10. Educate yourself a little each day by reading articles or trying new recipes.

Whether you want to begin living a healthy lifestyle or your doctor has said you need to make changes, these baby steps will give you a jumpstart. This list and future posts in this series are actually reminders to myself of what I’ve learned and to keep my self on track. Or in some cases to get back on track. So please don’t think I have this living healthy thing mastered. I just do the best that I can. Disclaimer: I am not an expert. I have learned alot through the years doing my best to be a good steward of this body God has given me. I simply want to share what I’ve learned with you. Remember, these are just baby steps to lead you to the next step of healthy living. For instance in number 3, I suggest you dilute fruit juice. Some experts say to avoid it altogether due to it’s high sugar (albeit natural) content. My belief is that diluted fruit juice is a much better choice than a can of pop. Over time as you dilute, you add more water and less fruit juice. See? Baby steps.

Knowledge is power. Start slow. Take a deep breath. Now, let’s not waste anymore time, let’s get started.

Cilantro Jalapeño Hummus

I love hummus after being introduced to it about a year ago. Although I loved it, making it was something that I didn’t think I wanted to tackle just yet because I thought it had to be somewhat involved. As I was looking through recipes the other day I came across this one. I looked through the ingredient list and had everything I needed except the main ingredient, the garbanzo beans. So, I determined in my head, before my cilantro went bad I would attempt to tackle this recipe. To my surprise, this was so easy! And delicious! This was the best hummus I have ever tasted! I loved it so much I shared it with a friend and now, today, am making my second batch.
