Crispy Chicken Nuggets

 

 

There is only one thing disappointing about these nuggets: no leftovers!

Easy. Crispy. Delicious.

I gather ingredients and set up a mini assembly line:

Melt about 1 stick of unsalted butter in a shallow dish.

Mix in another shallow dish:

  • 1 cup of Italian bread crumbs (or your own-just dry bread in a warm oven and then crumble in a food processor with oregano)
  • ½ cup of grated Parmesan Cheese

Slice 2 large organic free-range chicken breasts into slices and then in half to get bite size pieces. It is easier to slice if the chicken is slightly frozen.

Dip the chicken pieces into the melted butter and then coat with the bread crumbs.

Work quickly as the butter tends to solidify with the very cold chicken.

Place into a shallow baking dish.

Bake 400° for 20-25 minutes.
