This is the first (with many more to come) dish made with Quinoa for me!

Quinoa!

No, not kwin-oh-ah.

That’s how I pronounced it for quite awhile before hearing the correct pronunciation:

keen-wah

I am on a Sugar Challenge and while reducing/eliminating sugar from my diet, I am increasing protein.

Quinoa is an excellent source of protein and nutrients. It is gluten-free.

Yes, it still has a small amount of sugar and carbohydrates. Moderation is the key.

 

Quinoa, I believe tastes similar to couscous if you’re familiar with that. Princess disagrees with me. She doesn’t taste the similarity.

Think of it as a sort of nutty tapioca perhaps.

Quinoa Pilaf

12 oz. box organic Quinoa

4 cups water

¼ cup of butter

small green bell pepper, diced

small red bell pepper, diced

2 cloves garlic, crushed

3 stalks celery, sliced

4 carrots, sliced thinly

6 green onions, sliced thinly

  • Bring water and quinoa to boil in pan.
  • Reduce temperature to a simmer (bubbles not breaking surface).
  • Cover and cook till water is absorbed, about 10 minutes.
  • Meanwhile, melt butter in large skillet.
  • Begin chopping and slicing veggies.

  •  Saute them in butter to tender crisp.

  • Stir in cooked quinoa.
  • Enjoy!
