Healthy. Delicious. Simple.

Chicken Chili

Sauté in a ceramic or steel saucepot till tendercrisp:

  • Olive Oil or Broth (the healthier option)
  • Onions, chopped
  • Green/Red Peppers, chopped
  • Garlic, minced
  • Carrots, 1 shredded with a veggie peeler and 1 chopped

Stir in and simmer 15 minutes:

  • can of Great Northern Beans
  • can of Garbanzo Beans
  • can of White Kidney Beans
  • 2 cans of chicken
  • 4 cups broth (chicken or vegetable)

Add and simmer for 5-10 minutes:

  • Salt and Pepper
  • Fresh Parsley, chopped
  • Fresh Oregano, chopped

This recipe uses ingredients I always keep in my pantry. Improvise with Navy Beans if you don’t stock Garbanzo Beans. Herbs are fresh from the gardens. You can use dried oregano and parsley from your pantry if you haven’t started your herb garden yet. 🙂 MAKE IT YOUR OWN!
