Pizza Soup

 

Last night, after a busy day I needed a quick supper.

I pulled out a new-to-her cookbook Princess picked up at a charity second hand sale.

I found this recipe and added a few special touches.

Everyone loved it. It is supposed to serve 16. Our family of five did not leave much in the way of leftovers. 🙂

Give it a try! 

 

  • 2 pounds ground beef ( I used one but we wondered, ‘Where’s the Beef?’)
  • 2-26 oz cans of tomato soup
  • 6 cups of water
  • 24 oz jar of spaghetti sauce
  • 8 oz can tomato sauce
  • 1 Tbsp Italian seasoning
  • 2 Tbsp dehydrated onions
  • 8 oz box of Quinoa Veggie Curls Pasta (Healthy & Delicious. Besides, I have a wheat allergy.)
  • 8 oz pkg of Pizza Blend shredded cheese (Cheddar & Mozzarella)
  • Optional: Mushrooms, Green Peppers, Pepperoni

In a large kettle, brown beef; drain.

Add soup, water, sauces, seasoning, onions and any optional ingredients.

Bring to a gentle boil. Reduce heat and simmer for 5-10 minutes.

Add Quinoa Pasta and simmer for 8 minutes.

Stir in cheese. Simmer and continue to stir till melted.

Garnish with shredded cheese.

*You may want to try substituting the beef with sausage. Princess thought it would taste yummy with chunks of pepperoni too!
