Cheesy Easy Potatoes

These potatoes can be a quick dish to make for a pot luck supper.

This past weekend I whipped these up lickety split from ingredients I had on hand to take to a family gathering.

Our new great-nephew was introduced to the family!

I had several requests for the recipe so I thought I’d share with you too!

CHEESY EASY POTATOES

Ingredients:

  • 2 lb bag of Southern O’Brien Style Hash Brown Potatoes (Thaw overnight in the fridge)
  • 1 lb plain Greek Yogurt
  • 1 can cream of chicken soup (any cream soup will do, I just prefer chicken)
  • ½ stick butter, cut up in pieces
  • 2 cups of shredded cheese (I use Velveeta)
  • grapeseed oil to grease pan

Directions:

  1. Preheat oven to 425°.
  2. Use Grapeseed Oil to grease 9×13 baking dish.
  3. Mix the remaining ingredients together in a large bowl.
  4. Place into the greased baking dish.
  5. Bake for 15 minutes. Reduce oven temp to 375° and bake for 30 additional minutes.
  6. Enjoy!

Broccoli Soup

My dear friend, Karen, dropped by for a visit last week. We enjoyed an afternoon of  “catching up”, Bible Study, and brunch. I served taco salad and this hearty soup. It hit the spot on a rainy spring day! Princess made a batch of chocolate chip cookies the night before. They ended the meal on a sweet tone.  They are so good. I’ll have to share that recipe with you later…

While I enjoyed Karen’s company,  the soup simmered. Later, I served it to my family for an evening meal. 🙂 They loved it!

Give it a try for your family. It’s very easy!

Broccoli Soup ~ BackToFamily.net

  • 20 ounce broccoli, frozen
  • 4 cups chicken broth
  • 1 cup onion, diced
  • 1 cup celery, diced
  • 2 cups whole organic milk
  • 4 tablespoons coconut flour
  • 4 tablespoons butter
  • 8-12 ounce Cheez Whiz
  • Salt and Pepper to taste

Bring broccoli, broth, onions, and celery to boil.

Simmer 15 minutes.

Add milk, flour, butter, and Cheez Whiz.

Simmer for another 15 minutes.

Sprinkle with salt and pepper to taste.

I love this recipe. I usually have everything already in my pantry. It makes a great hearty wintry night meal.

Actually it’s like a thick stew. Hmm…maybe I should’ve called it Cheesy Cabbage Stew!

Omelet Muffins

 

 

Early to bed.

Early to rise.

Camo Guy leaves for work before the sun shines.

Breakfast on the go for him.

Our chiropractor, who is teaching us about nutrition, suggested this recipe to ensure he gets protein in the mornings.

This is very much a MAKE IT YOUR OWN recipe.

I use 14 eggs for 12 omelet muffins.

Get creative with fillings. Mix and match:

  • diced cooked ham
  • shredded cheese
  • crumbled crisply cooked bacon
  • diced peppers
  • minced onions
  • minced chives
  • shredded carrots
  • herbs and spices
  • crumbled cooked sausage
  • shredded zucchini
  • bean sprouts

Bake 350° 15-20 minutes.

Let cool. Refrigerate or freeze.

Crustless Quiche

 

Abundance of eggs?

Crustless Quiche makes for a quick and easy dinner!

  • 10-12 eggs
  • 1 cup of shredded cheese (Pizza Blend, Cheddar, Your Favorite)
  • 1 cup of diced ham
  • 2 Tbsp dehydrated minced onions
  • 1 small green or red pepper, diced
  • ¼ cup milk
  • salt and pepper to taste
  • your favorite herbs

Mix all together and pour into a 9″ deep dish pie plate.

Bake 350° 30 minutes (until knife comes out clean)

Let cool for a few minutes.

MAKE IT YOUR OWN

All ingredients in this recipe can be adjusted to your taste.

This is a great recipe to sneak incorporate vegetables into a meal. 🙂

Macaroni Cheesy Easy

 

Comfort food at its best!

Macaroni Cheesy Easy

  • Cook a box of pasta in a large saucepot.
MAKE IT YOUR OWN
Pasta: Gluten Free- Quinoa, Brown Rice, Corn.
Any style: Rotini, Macaroni, Shells, Wheels.
  • Drain and rinse in cold water.
  • In same saucepot, melt 2 Tbsp-¼ cup butter.
  • Add 1 box of cream cheese. Melt while stirring.
  • Stir in ¾ -1 cup of milk. (Rice milk can be used)
  • Stir in 2 cups shredded cheese. (Cheddar, Pizza Blend, Velveeta)
  • Add salt and pepper to taste.
  • Combine pasta with cheese sauce.
  • Stir well and heat the pasta.
  • Serve sprinkled with grated Parmesan Cheese.
Simple. Delicious. Using items kept in stock.
