Mashed Potato Pancakes


Mashed Potato Pancakes reminds me of days gone by when my Dad would make these.

We gobbled them up!

I “healthified” them by replacing the white flour with oat bran.

Omelet Muffins

 

 

Early to bed.

Early to rise.

Camo Guy leaves for work before the sun shines.

Breakfast on the go for him.

Our chiropractor, who is teaching us about nutrition, suggested this recipe to ensure he gets protein in the mornings.

This is very much a MAKE IT YOUR OWN recipe.

I use 14 eggs for 12 omelet muffins.

Get creative with fillings. Mix and match:

  • diced cooked ham
  • shredded cheese
  • crumbled crisply cooked bacon
  • diced peppers
  • minced onions
  • minced chives
  • shredded carrots
  • herbs and spices
  • crumbled cooked sausage
  • shredded zucchini
  • bean sprouts

Bake 350° 15-20 minutes.

Let cool. Refrigerate or freeze.

Crustless Quiche

 

Abundance of eggs?

Crustless Quiche makes for a quick and easy dinner!

  • 10-12 eggs
  • 1 cup of shredded cheese (Pizza Blend, Cheddar, Your Favorite)
  • 1 cup of diced ham
  • 2 Tbsp dehydrated minced onions
  • 1 small green or red pepper, diced
  • ¼ cup milk
  • salt and pepper to taste
  • your favorite herbs

Mix all together and pour into a 9″ deep dish pie plate.

Bake 350° 30 minutes (until knife comes out clean)

Let cool for a few minutes.

MAKE IT YOUR OWN

All ingredients in this recipe can be adjusted to your taste.

This is a great recipe to sneak incorporate vegetables into a meal. 🙂

Oat Bran Pancakes

 

Pancakes packed full of protein!

  • 1 egg, organic preferably
  • 2 Tbsp oat bran
  • 2 Tbsp FAGE Total 0% Greek yogurt
  • 1 tsp Stevia
  • 1 tsp. Cinnamon
  • 1 tsp. Vanilla

Mix all ingredients till smooth.

Pour into a lightly oiled skillet.

Turn when bubbles break the surface.

Cook for a few more minutes.

I don’t add any sweetener to these anymore.

In the beginning of my Sugar Challenge, I added a few drops of pure maple syrup and a pat of butter.

Then I switched to only butter.

Now I am able to enjoy the delicious flavor of the Oat Bran Pancakes just as they are.

Basic French Toast

This is a nutritious breakfast and a great way to use up some extra eggs in the fridge or bread in the pantry going stale!

MAKE IT YOUR OWN by using homemade day old bread or any bread your family enjoys.

My family seems to believe wheat bread is dry-it absorbs the egg mixture well.

An easy way to get them to eat wheat bread.

Way Easy Egg Muffins

A more healthy alternative than the drive-thru!

  • Start with a whole wheat English muffin, toasted with a pat of real unsalted butter
  • On one side of a skillet fry an organic egg in olive oil.
  • On the other side of the skillet heat up 2 slices of turkey bacon
  • Place a pinch of freshly shredded mozzarella on muffin.
  • Add egg and turkey bacon.
  • Cover with another pinch of freshly shredded mozzarella
  • Top with the other slice of muffin

Way Easy and healthier!!
